 Icing ingredients

Makes: 36 cookies

  1. First of all, you will need to preheat the oven to 350 degrees. Then take two cookie sheets and line them with parchment paper or a silicone baking mat.
  2. Using a large bowl, beat the butter, sugar, and almond extract until creamy and the ingredients have combined.
  3. Next up, get a medium bowl. Add the flour and salt and mix until combined.
  4. Then take both sets of ingredients and gradually beat the dry ingredients into the wet until a dough forms.
  5. Mix in the ¼ cup of Valentine’s Day sprinkles. You now have your cookie dough.
  6. Lightly flour a cutting board and roll the dough into a ¼in thick rectangle.
  7. Use the cookie cutter and cut out mini Mickey Mouse cookies
  8. Place the mickey mouse shapes onto the cookie sheets and bake for 8-10 minutes or until lightly golden brown and looking crisp.
  9. Make sure you allow the cookies to cool before transferring them to a wire rack.
  10. Using a small bowl, whisk the powdered sugar, milk, and vanilla until combined and smooth. This creates your icing ready to decorate the cookies.
  11. Spoon the icing into the piping bag and cut the tip-off.
  12. Drizzle the icing over the Mickey Mouse cookie bites.
  13. Sprinkle some cookie sprinkles on top and allow the icing to harden before enjoying!.

Recipe notes and tips

This is a relatively straightforward recipe to follow and one that you can enjoy over and over. It is also a recipe that your children might want to get involved with it as well. I wanted to share with you a few extra notes and tips to ensure that you can recreate these at home with ease.

  • Make sure that you give the cookies enough time to cool before you add the icing. Don’t rush this stage. Adding icing to hot cookies will cause the icing to melt and not hold its form.
  • Make sure you preheat the oven before placing the Mickey Mouse cookies in there to cook. It ensures that the cookie bites get a blast of optimum temperature so that they cook all the way through. This also helps them to crips up to form that crumbly texture.

Variations to try

Like with many recipes there will always be variations to try. Here are a few suggestions.

  • You don’t need to stick with Mickey or Minnie versions of these cookies. You can get as creative as you like. As it is Valentine’s day why not use a heart shape cookie cutter instead? Or you could even use a cookie cutter in other Disney characters to create a few different options.
  • Edible glitter could really transform the look of these cookies.
  • If you prefer, you could use white or milk chocolate to drizzle onto the cookies instead of icing.
  • Decorate these cookies however you want. You could even add food colouring to the icing and let the kids go crazy decorating them in different ways.
  • Why not add some chocolate chunks to the cookie dough? This could add a whole different element to them.

Of course, there will always be questions that everyone might have when it comes to trying a few different recipes. With the Mickey Mouse valentines cookie bites recipe here are some of the common questions that you might have.

Yes, you can! You can make the dough and then freeze it and use it as and when you need it. Perfect for when you need to get some cookies out quickly for everyone to enjoy.

They are best stored in an air-tight container and in most cases, it would be ideal to store them in a cool dry place.

Yes, you can, they do work well frozen. You might want to decide if you are freezing a whole batch or individually. It can be easier to freeze individually as it is more convenient to only defrost the ones that you need.
