Mickey Mouse Valentine Cookie Bites

 Icing ingredients 

Makes: 36 cookies

  1. First of all, you will need to preheat the oven to 350 degrees. Then take two cookie sheets and line them with parchment paper or a silicone baking mat. 
  2. Using a large bowl, beat the butter, sugar, and almond extract until creamy and the ingredients have combined. 
  3. Next up, get a medium bowl. Add the flour and salt and mix until combined.
  4. Then take both sets of ingredients and gradually beat the dry ingredients into the wet until a dough forms.
  5. Mix in the ¼ cup of Valentine’s Day sprinkles. You now have your cookie dough. 
  6. Lightly flour a cutting board and roll the dough into a ¼in thick rectangle. 
  7. Use the cookie cutter and cut out mini Mickey Mouse cookies
  8. Place the mickey mouse shapes onto the cookie sheets and bake for 8-10 minutes or until lightly golden brown and looking crisp. 
  9. Make sure you allow the cookies to cool before transferring them to a wire rack.
  10. Using a small bowl, whisk the powdered sugar, milk, and vanilla until combined and smooth. This creates your icing ready to decorate the cookies. 
  11. Spoon the icing into the piping bag and cut the tip-off.
